This is one of those easy to prepare recipes that can be adjusted depending upon what you have on hand and what your family likes to eat.

Bean and Queso Fresco Tostada

Ingredients:

Tostada Shell

Beans (refried or whole)

Queso fresco (Mexican soft cheese)

Tomato

Green Onions

Cilantro

Olives

Instructions:

1) Pre-heat oven or toaster oven to 350º

2) Put beans and a couple slices of queso fresco on tostada shells

3) Bake until they “look done”
(My family likes their cheese browned and their shells crispy.
You may prefer to pull them out of the oven before I do.)

4) Top with chopped tomato, green onions, cilantro and olives
