When the weather is cool, I love making a large pot of soup that’s big enough for leftovers. Black bean soup is a favorite. This one takes on an extra rich and hearty flavor from the Guinness Extra Stout.

Stout Black Bean Soup

Soup Ingredients:

1 pound black beans

1 medium onion, chopped

4 cloves garlic chopped

1/2 bunch cilantro

10 c water

12 oz guinness extra stout

salt to taste

Optional Garnish:

Sour cream

Salsa

Cilantro

Instructions:

Combine all ingredients in large stock pot

Bring to a boil

Reduce heat to medium

Simmer approx. 2 hours until beans are tender – stirring occasionally

Garnish and serve
