Avocado and Egg Breakfast Sopes

A leisurely breakfast at the kitchen table is nice, but there are days when we need something that can be eaten on the run. These breakfast sopes can be enjoyed either way.

Avocado and Egg Breakfast Sopes

Ingredients:

Sopes
Egg
Avocado, sliced thinly

Optional: Salt, Pepper, Hot Sauce

Instructions:

Pre-heat oven or toaster oven to 400°

Place sope on a baking pan. Place avocado slices around the edges and add an egg.

Bake for approx. 10 minutes – more or less depending upon how hard or runny you like your eggs

    What is a sope? Is it like an english muffin? I have never heard of it and I lived in California… many years ago but never heard of that one.

    @mycraftingworld A sope looks similar to an English muffin, but it’s made from corn instead of wheat. I buy freshly made ones from a Mexican market, but they carry pre-packed sopes in regular chain grocery stores. At my local Ralph’s (Kroger), they are near the cheese in a section that has Mexican style cheese, salsa and other items.

    I luv sopes but haven’t had them for quite a long time.
