During the warm summer months, I’m always looking to create meals that satisfy with minimal oven or stove use. This Tuna Avocado Soft Tostada recipe only takes a few minutes in the oven, prep time is quick and it’s easy to adapt the ingredients to what I have on hand and the quantity can easily be increased for a crowd.

Tuna Avocado Soft Tostadas
Ingredients:
6 Small Corn Tortillas
1 Can Wild Planet Albacore Tuna
1 Large Avocado (or 3 small)
Cilantro
Cheese
Optional: Finger Lime
Instructions:
Pre-heat oven to 350°.
Place tortillas on a baking sheet. Layer each one with mashed avocado, cilantro, tuna and cheese.
Bake for about 5 minutes – just until cheese is melted.
Optional: Garnish with Finger Lime
Tips:
I like this recipe as a soft tostada, since the texture of the soft tortilla goes so well with the creamy, warm avocado. If you prefer a crunchy tostada, you can use a pre-packaged tostada shell or make your own.
