Egg in a hole is a favorite here in my house, but every time I make it I cringe at how much butter it takes to make it taste so good. I’ve been playing around with alternatives and this one is pretty and absolutely delicious.
My California Style Egg in a Hole involves no butter and no bread. Instead, we get to enjoy our egg and avocado in a new way. The egg is baked in the hole where the avocado seed used to be.
California Style Egg in A Hole
Ingredients:
Avocado
Eggs
Salt
Pepper
Chili Powder
Instructions:
Pre-heat ove to 400°
Slice avocado in half and remove seed. If you have a large avocado and a small egg, use the avocados as is. If you need more space in the hole, scoop out a little bit of the avocado to make room for the egg.
Place avocado halves in a muffin tin or baking dish where they can sit flat and not roll over.
Crack an egg into each avocado hole. Top each one with a little bit of salt, pepper and chili powder.
Place in oven and bake for 10-12 minutes. (shorter time for runny eggs, longer for hard yolks)
