A leisurely breakfast at the kitchen table is nice, but there are days when we need something that can be eaten on the run. These breakfast sopes can be enjoyed either way.
Avocado and Egg Breakfast Sopes
Ingredients:
Sopes
Egg
Avocado, sliced thinly
Optional: Salt, Pepper, Hot Sauce
Instructions:
Pre-heat oven or toaster oven to 400°
Place sope on a baking pan. Place avocado slices around the edges and add an egg.
Bake for approx. 10 minutes – more or less depending upon how hard or runny you like your eggs
