Easy Blueberry Apricot Fruit Slushie
I get to enjoy two of my favorite Summer fruits at once, when I make this delicious blueberry apricot slushie.
A smoothie or slushie is a refreshing treat, when the weather is warm.
Blueberries have a smooth sweetness and apricots are a bit tart, so they complement each other well.
The berries are the dominant color, but you can taste both fruits.
Slushie Ingredients
Both of these fruits peak in the Summer, so I always look forward to them.
It is possible to get them just about year round, but the local ones arrive during the warm Summer months.
This year the California blueberries are extra good.
I thought I might be imagining it, but a friend confirmed that she, too, is buying more than usual right now.
I have a VitaMix Blender that I got specifically for it’s smoothie and slushie making skills.
Mine has been used regularly for many years, and it still works like new.
Prior to this, I had gone through several cheap blenders that couldn’t really handle ice or frozen fruit.
The VitaMix was definitely a good investment.
I’m pretty sure I’ve made over a thousand frozen beverages in mine.
And, I expect it to continue blending for many more years.
When you load up your blender to make the slushie, add the ice first.
Then, put the softer ingredients in on top of the ice.
The blades will get to work on the hard ice first, so your slushie will be smooth and completely blended quickly.
Enjoy this fruit drink as an afternoon pick me up or have it as part of your breakfast or lunch.
Blueberry Apricot Slushie Recipe
Ingredients:
½ pint Blueberries
6 Apricots
3 cups Ice
1 T Sugar (optional)
Optional: Extra fruit for garnish.
Instructions:
1) Wash fruit, slice apricots and remove pits.
2) Add ingredients to a high speed blender in this order: ice, sugar, apricots and blueberries.
3) Blend until smooth.
4) Pour into a glass and serve immediately.
