Like many of you, my family is making an effort to live responsibly. We have chickens and fruit trees in the back yard and are mindful about the products we purchase.
I was thrilled to learn that the Fairmont Hotel near me in Newport Beach, California is also concerned about such things. Since California is in a drought, you’ll notice signs in the hotel about their water conservation efforts. Their restaurant, Citrus, sources locally grown foods that are featured in their dining room.
They also have bee hives on the roof of the 6th floor of the building. The bees, of course, are busy doing good things for the plants and trees in the area. When the honey is harvested it is used at the hotel. The flavor is light and delicious.
Isn’t this a great way for an otherwise unused rooftop to be put to good use?
