Do you like the sweet and tart flavor combination of strawberry and rhubarb for jam or pie?
One of my sisters has been very good at growing rhubarb in her garden for years. She regularly gives me fresh rhubarb that she has kindly cut up and packed into bags, so it’s ready for me to use.
While I wouldn’t want to snack on raw rhubarb, I do like to use it raw in smoothies. The texture is smooth, thanks to my high speed blender. The sweet tart taste is delicious!
Strawberry Rhubarb Smoothie
2 Cups Strawberries, halved
1 Cup Rhubarb, cut into approx. 1 inch pieces
1 Cup Milk (or vegan substitute)
1 T Sugar, more or less to taste
Add all ingredients to blender and blend until smooth.
Tip: I like my smoothies cold, so I freeze fresh fruit. I put it in smoothie size freezer bags or containers and then blend it while it’s frozen.
