Strawberry Rhubarb Smoothie

This sweet and tart flavor combination is great for jam and pie, but a strawberry rhubarb smoothie is also quite delicious! 

One of my sisters has been very good at growing rhubarb in her garden for years, so she regularly gives me fresh rhubarb.  She kindly cuts it up and packs it into bags, so it’s ready for me to use.

While I would not want to snack on raw rhubarb, I do like to use it raw in smoothies. My high speed blender does a great job, so the texture of the smoothies is perfect. The sweet tart taste is delicious!

Strawberry Rhubarb Smoothie Recipe

Ingredients:

2 Cups Strawberries, halved
1 Cup Rhubarb, cut into approx. 1 inch pieces
1 Cup Milk (or vegan alternative)
1 T Sugar, more or less to taste

Instructions:

Add all ingredients to blender and blend until smooth.

Tip: I like my smoothies cold, so I freeze fresh fruit. I put it in smoothie size freezer bags or containers and then blend it while it’s frozen.
