I thoroughly enjoy eating crepes, but have not mastered my crepe making skills. Mine taste good, but are not at all attractive. When I found out that Melissa’s has pre-packaged, ready to use crepes, I knew this was my solution. Now my crepes can look pretty and taste good.
Strawberry Papaya Crepe Filling Recipe
Ingredients:
8 ounces soft cream cheese
2T powdered sugar
1/4 t clear vanilla extract
Instructions:
Halve the strawberry papaya and discard the seeds. Then scoop the fruit into a mixing bowl.
Add cream cheese and powdered sugar to the mixing bowl.
Blend thoroughly at a low speed (I used the 2 setting on my KitchenAid) or mix by hand.
Add the clear vanilla and mix just long enough to blend it in.
Put filling on top of the crepe and roll it up. The Melissa’s crepes are large, so I like to cut them in half.
Optional: Drizzle with chocolate or top with whipping cream.
