Vegan Pressure Cooker
Time saving vegan pressure cooker meals? Yes!
When I was growing up, my mother used her pressure cooker often. I loved the creamy mashed potatoes she made after pressure cooking the potatoes to perfection. But, I was terrified of the pressure cooker.
I had been sternly warned to stay away and not to touch the pan. Since I did not want to blow up the house or die in an explosion, I didn’t want anything to do with that dangerous pan.
Fortunately, pressure cookers have come a long way since then. They are now both safer and easier to use.
I recently attended an educational and tasty cooking class at Melissa’s Produce. Jill Nussinow, author of Vegan Under Pressure, shared recipes from her cookbook, demonstrated techniques and answered questions. You can prepare a wide variety of vegan dishes in a pressure cooker, including chocolate cake.
I am now confident that I can safely use my new Sitram Pressure Cooker! It has built in safety features that don’t allow it to open while still under pressure, so there will be no accidental explosions in my kitchen.

The Sitram Pressure Cooker is easy to use, much easier than I expected. I’m glad I overcame my childhood fears and learned how to use this convenient kitchen helper.
I loved the variety of dishes I tasted at the the cooking class, but think I’ll use mine mostly for cooking chickpeas and other legumes. There is a whole chapter in the cookbook devoted to legumes that I’ll be referring back to regularly.
