For some reason, I had it in my head that miso soup was hard to make. I enjoy it at restaurants, but when I tried making instant miso soup with a ‘just add water’ mix if didn’t taste as good as fresh. Now that I know how easy it is to make fresh homemade soup, I can make enough for the whole family or even just a small amount for a single serving in just a a few minutes.
I used red soy bean paste this time. There are a wide variety of types and brands that can be substituted.
Miso Soup
Ingredients:
6 cups Water
1/4 cup Miso (soybean paste)
1 cup Napa Cabbage, chopped
1/2 cup Extra Firm Tofu, drained and cubed
2 Green Onions, chopped
Optional:
Soy Sauce
Sriracha
Instructions:
Bring water and miso to a boil, stirring occasionally so that the miso will dissolve.
Remove from heat. Add cabbage, tofu and onions. Cover and let it sit for a couple minutes.
Serve and enjoy. Soy sauce or Sriracha can be added, if desired.
