Papaya Breakfast Bowl

feature yogurt papaya boat breakfast

This yogurt papaya boat is pretty and delicious, so it is a wonderful way to start the day.

Eat it for breakfast or, if you’d like, have it later on for a snack or dessert.

It only takes a few minutes to prep this tasty meal, but it is a whole lot more fun than eating yogurt out of a cup.

I typically choose a rich and creamy Greek yogurt, but a vegan yogurt alternative is delicious, too.

This papaya boat is topped with fresh blueberries and toasted coconut, and then nutritious seeds are sprinkled on top.

Use plain chia seeds or a Superseed Blend that is a mixture of healthy ingredients.

1 Ripe Papaya
2 cups Greek Yogurt (or vegan alternative)
1 cup Blueberries
½ cup Coconut Flakes, toasted
2 T Chia Seeds (or a Superseed Blend)

Supplies

Chef Knife
Large Spoon

Instructions

1) Cut papaya in half lengthwise and use a large spoon to scoop out the seeds.

2) Fill the papaya halves with yogurt. Then, top with blueberries and coconut flakes and sprinkle with seeds.

3) Serve immediately.

Following are some other topping ideas, so you can personalize your breakfast boat. If you are serving a crowd, you can set up a breakfast bar for each person to choose their own toppings.

  • Raspberries
  • Blackberries
  • Strawberries
  • Dragon Fruit
  • Pineapple Chunks
  • Almonds
  • Granola
  • Hemp Seeds
  • Walnuts
  • Sunflower Seeds
