Savory Jalapeno Cheese Muffins

I have been happily using Cacique authentic Mexican cheeses for years and was excited when they asked me to create a series of recipes for them.

My first assignment was “Snacks To Go.”

Usually, when I think of cheese, I imagine it hot or cold, not as a portable snack.

Then I came up with this delicious Savory Jalapeno Cheese Muffins recipe that can easily be eaten on the run and captures the authentic flavor of Cacique Queso Quesadilla Jalapeño.

We usually eat some while they are hot and then save the rest to pack in lunches or eat for snacks.

Does your family get busy with work, school, sports and activities?

Mine definitely does.

Even though my boys are now men and working while they are going to college, I still regularly mother them with reminders to take food to eat when they are on the go.

Fortunately, neither one of my guys like junk food.  

I always keep a good supply of homemade snacks and fruit for them to grab as they run out the door.

Savory Jalapeno Cheese Muffins

Muffins are easy to eat in the car and pack well in back packs and gym bags.

These savory cheese muffins don’t have any sugar added, so they feel more like a little meal than a sweet muffin.

My family likes spicy foods, so I used Cacique Queso Quesadilla Jalapeño.

It isn’t what I would consider “hot,” but it has flavor and a little kick from the Jalapeño.

You can substitute the plain Queso Quesadilla, if you’d like.
