Roasting vegetables is an easy alternative to stir fry. I can pop them in the oven and relax while the roasting brings out the wonderful, natural sweetness of the veggies. It takes longer to cook, but I don’t have to watch the pan like I do with stir fry.
I like serving this with rice for a vegetarian (vegan!) meal. It could also be used as a side dish.
Roasted Napa Cabbage, Carrots and Daikon
Ingredients:
1 Small Napa Cabbage, chopped
2 Cups Daikon, sliced
4 Carrots, sliced
2 T Soy Sauce or Tamari
Instructions:
Pre-heat oven to 400°
Line 9″ x 12″ baking dish with parchment paper or silicone baking mat.
Put cabbage on the bottom and top with carrots and daikon radishes. Roast in oven for approx. 30 minutes.
Remove from oven. Add soy sauce or tamari, stir vegetables and then return to oven for another 15 minutes.
