This grilled watermelon is unique and delicious.
The heat brings out the natural sweetness of the watermelon and the lime and Hatch chile give it a fun flavor twist.
This creation was inspired by a recipe on a friend’s blog, Cooking on The Weekends.
A few changes were made to use ingredients that I had on hand.
Since I don’t have an outdoor grill, I used a panini press and it worked beautifully.
Grilled Watermelon with Lime & Hatch Chile
Ingredients:
Watermelon Slices (1 inch thick)
Limes
Hatch Chile Powder
Instructions:
Pre-heat panini press to 400º
Squeeze lime juice onto watermelon slice and sprinkle with Hatch chile powder. Place face down on hot panini press. Add lime and chile to the other side of the watermelon.
Close press and cook for 2 minutes.
Remove from heat and enjoy!
