Slow Cooker Vegan Barley Stew


When the weather gets cool, I turn to comfort food. When I was growing up, I remember having Beef with Barley out of a can on rainy days. These days I prefer to make things from scratch.

The simple recipe calls for basic ingredients that I typically keep on hand. It only takes a couple minutes of prep time and the the crock pot does all the work.

Slow Cooker Vegan Barley Stew


1 1/2 cups Barley
4 cups Vegetable Stock
2 cups Water
1/2 Medium Onion, chopped
3 Carrots, sliced
2 Medium Potatoes, cubed
3 Cloves Garlic, sliced
1 t Salt (or more to taste)
1 t Cumin
1 t Hatch Chile Powder


Combine all ingredients in crock pot.

Cook on high for about 3 hours.

    I love recipes i my slow cooker. I don’t have to worry so much about timing. I can make extras and everything is so moist. Thanks for this new recipe.

    This looks delicious, but I think I will add a beef bone to make yummy broth and some roast or steak to “beef” it up.

    That looks good – always looking for something that is different and low in stuff. But of course, could always add beef to it if that was what I was in the mood for. And rather nice presentation with the dishes! :)

    This looks so yummy! I wish my hubby could eat it…but most of the things in this recipe is off his diet… but I might try to make a smaller batch just for me!

    This looks delicious but I would have to add some beef for my family of carnivores.

    This looks great! I love that I can serve it vegan to my FIL and then add some leftover beef to satisfy the boys who freak it there is no meat in their dinner.

    I’ve never been a big fan of Barley, but I must admit, this looks good. I may just have to try it.
