Have you cooked with celery root? This vegetable is also known as celeriac. It’s brown and hairy and isn’t as uniformly shaped as beets, turnips or other root vegetables. It’s flavor is similar, but not identical to celery.
This vegan friendly soup was a big hit in my house. The apple adds a bit of sweetness and the potatoes give it a creamy texture without adding dairy.
Creamy Vegan Celery Root and Apple Soup
Ingredients:
3T Olive Oil
1 Red Onion, chopped
2T Minced Garlic
1 Celery Root, peeled & chopped
2 Apples, peeled & chopped
1 Cup Potatoes, Cubed
3 Cups Water
3 Cups Vegetable Stock
2t Kosher Salt (more or less to taste)
1t Cumin
Instructions:
Add olive oil, onion and garlic to a stock pot. Cook on high for a few minutes until onions start to get tender.
Add all other ingredients and bring to a boil. Cook approx. 20 minutes stirring occasionally until potatoes are tender.
Remove from heat.
Using an immersion blender, blend until creamy. I prefer to leave a little bit of texture in mine.
