This cucumber mint dip is delicious, so you can serve it as an appetizer or along with a meal.
I’ve had a variety of cucumber dips made from Greek Yogurt or labne, when I go out to eat. That inspired me to try homemade.
It’s simple, rich with probiotics and tastes fantastic. I use labne, instead of yogurt, to give it a thicker consistency.
Labne is also known as kefir cheese. I bought this at a mid-eastern market where they have many labne brands in the yogurt section. Some time it is spelled ‘labneh’ with an ‘h’ on the end.
The nationwide chain grocery store in my area also carries it in the international section of the dairy case. I generally buy whichever brand is cheapest and haven’t been disappointed.
Labne Cucumber Mint Dip can be served on it’s own with bread, chips or veggies. Or it works well as an accompaniment to rice, eggs, vegetarian dishes, fish and meat.
This dip only takes a few minutes to prepare. It’s great for parties, family movie night or an ordinary meal.
Labne Cucumber Mint Dip Recipe
Ingredients:
1 lb. Labne Kefir Cheese
2 Persian Cucumbers, chopped
1/2 bunch Mint, chopped
2 cloves Garlic, chopped
1/2 t Salt
Instructions:
Mix all ingredients together by hand.
Serve immediately or cover and chill in the refrigerator until you’re ready to eat.
