Cheese Corn Dip
A warm corn dip is fun as an appetizer or as part of a meal.
When I was growing up, it was a real treat to have cream style corn with dinner.
Recently, I was feeling nostalgic and stocked up when cream style corn was on sale.
Unfortunately, it didn’t take long for me to get bored with straight out of the can corn.
What was I supposed to do with all this cream style corn cluttering up my kitchen?
Get creative, of course.
I’ve been having a whole lot of delicious fun using cream style corn as an ingredient instead of as a side dish on it’s own.
My favorite creation so far is this Easy Cheesy Warm Corn Dip.
The warm dip is inexpensive and only takes a few minutes to prepare.
I served it with chips today, but it is also good with crusty bread or warm tortillas.
This dip is great party food for game day or another celebration.
It’s also easy to throw it together in a pinch, if unexpected guests arrive.
Easy Cheesy Warm Corn Dip
Ingredients:
2 15 oz. cans Cream Style Corn
4 Green Onions, chopped
1/2 cup Cilantro, chopped
2 t Minced Garlic
2 cups Shredded Cheddar Cheese
Optional: Salt to taste
Instructions:
Combine corn, onion, cilantro and garlic in a skillet. Cook on medium heat until warm, stirring occasionally to keep it from sticking.
Stir in cheese and turn burner off. The cheese will melt quickly.
Serve warm with chips, crusty bread or warm tortillas.
