A bowl of soup is a wonderful way to warm up on a cold day.
Soup from a can often contains chicken or beef stock and a whole lot of sodium.
It doesn’t take long to make a nutritious meat-free soup with ingredients that will leave you feeling good.
Creamy Vegan Spinach Soup
Ingredients
1 Bunch Spinach
1 Medium Onion, chopped
6 Cloves Garlic, sliced
3T Extra Virgin Olive Oil
1 Pkg. Silken Tofu
4 Cups Water
1 t Salt (or more to taste)
1/8 t Black Pepper
Instructions
Sauté garlic, onion and olive oil in the bottom of a soup pan for a few minutes.
Add all other ingredients.
Bring to a boil and then reduce heat to low.
Simmer for 15-20 minutes stirring occasionally.
Pour Soup into a blender. With the lid on tightly, blend briefly until creamy. With a large blender, you’ll be able to do it all in one batch. If your blender is smaller, you’ll need to blend in small batches.
