PB&J Pinwheel Cookies Recipe

Ingredients
- 1 pre-rolled pie crust dough (refrigerated )
- 1/2 cup peanut butter (creamy or chunky)
- 1/4 cup jelly or jam (your favorite flavor)

Rimmed baking sheet
Silicone baking mat or parchment paper

Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- Carefully unroll the pre-rolled pie crust dough onto a clean, flat surface.
- Spread the peanut butter evenly over the pie crust, leaving a small, uncovered edge along one of the long sides. This helps to seal the roll.
- Carefully spread the jelly or jam in a stripe down the center of the peanut butter layer, running along the long edge of the crust. Be careful to not overfill, or it will run out the sides.
- Starting from the long edge opposite the uncovered edge, tightly roll the pie crust into a log, similar to a jelly roll.
- Using a knife, slice the log into rounds about ½ inch thick. Try to cut evenly, so the cookies bake uniformly.
- Place the pinwheel slices onto a baking sheet lined with a silicone baking mat or parchment paper, leaving a little space between each cookie. This prevents them from sticking together as they bake.
- Bake for 8 to 10 minutes, or until the edges are golden brown. Keep an eye on the cookies, as bake times may vary.
- Remove the pan from the oven and let the cookies cool for a few minutes before transferring them to a wire rack to finish cooling.
- Enjoy immediately, or store in an airtight container for later.
