Pineapple Coconut Dip

Pineapple and coconut were made for each other, so this pina colada dip is a perfect sweet treat that combines these fruit.

It is lovely to sip a piña colada on a Mexican beach, but this is a dip that the whole family can enjoy.

The dip has the flavors of pineapple and coconut, but no alcohol at all.

It is lovely to dip fresh pineapple sticks into the pina colada flavored dip, when you want a fruity dessert or as an afternoon snack.

Choose a pineapple that is ripe, but still firm.

An overripe pineapple will be fine IN the dip, but will be difficult to cut into sticks for dipping.

In my area, I can find fresh pineapples year round.

IF you don’t have access to a fresh pineapple, drained canned crushed pineapple works great in the dip.

Then you can dip fresh strawberries or even a vanilla wafer.

1 Pineapple
1 cup Cool Whip
2 T Heavy Whipping Cream
2 T Shredded Coconut

1) Slice pineapple into slender sticks, so they can be served with the dip. Set aside ¼ cup of the pineapple to use in the dip.

2) Add Cool Whip, ¼ cup of the pineapple and heavy whipping cream to blender and blend. It should be fluffy and well combined, but don’t overdo it.

3) Pour dip into serving bowl and top with shredded coconut.
