All The Colors of The Rainbow

Fresh fruit popsicles are a wonderful treat, but it is even more fun to have rainbow popsicles in red, orange, yellow, green, blue and violet. 

These frozen ice pops are made with fruit and milk, but you can easily make them dairy-free with a vegan milk alternative. 

I prefer almond or coconut milk with the fruit, but you can substitute whichever plant based milk is your favorite. 

The tart green lime needs a little honey or agave nectar sweetener, but all of the other colors are delicious with only the natural sweetness of fruit.

If you just want to make one or two of the flavors, that’s fine. 

The ice pops will be delicious on their own. 

But … it is so much fun to have a whole rainbow of flavors to choose from!

Rainbows are beautiful anytime, since they are a symbol of peace, hope and good fortune. 

They are also just perfect to serve in June as part of your pride month celebrations. 

You can also make them for a St. Patrick’s day party and imagine a pot of gold at the end of the rainbow. 

However, rainbows are fun and popsicles are delicious all year long.

Rainbow Popsicles Recipe

Ingredients

Red

½ cup Milk (or dairy-free alternative)
½ cup Raspberries

Orange

½ cup Milk (or dairy-free alternative)
½ cup Mango, chopped

Yellow

½ cup Milk (or dairy-free alternative)
½ cup Banana

Green

½ cup Milk (or dairy-free alternative)
Juice of 1 Lime
1 T Honey or Agave Nectar

Blue

½ cup Milk (or dairy-free alternative)
½ cup Blueberries

Violet

½ cup Milk (or dairy-free alternative)
½ cup Blackberries

Supplies

Blender
Popsicle Mold
Popsicle Sticks

Instructions

1) Prepare each color individually by blending together the milk and fruit.

2) Pour the red, orange, yellow, green, blue and violet blended fruit into the popsicle molds and insert the popsicle sticks.

3) Freeze overnight.

4) When you are ready to serve the rainbow popsicles, run the molds under hot water for about 20 seconds to loosen the ice pops from the molds.
