Fruit Salad Spring Rolls Recipe

Ingredients
- 1 package rice paper wrappers (round or square, whichever you prefer!)
- Hot water (just off the boil)
- Assorted fresh fruit, cut into matchsticks or thin slices. Think about a rainbow of colors and textures!
Great choices: Strawberries (sliced lengthwise for a pretty display!), kiwi (peeled and sliced into rounds), mango, pineapple, apples, pears, watermelon, cantaloupe, honeydew, blueberries, raspberries. Don’t be afraid to mix and match! - Optional for dipping: Your favorite yogurt (plain, vanilla, or a fruit-flavored yogurt works wonderfully!)

- Large shallow bowl or pie plate (for dipping the rice paper)
- Sharp knife
- Cutting board
- Plates for assembling and serving
Instructions
- Prep Your Fruit: Wash and cut all your fruit. For fruits like apples, pears, mango, and melons, aim for thin matchsticks. For strawberries and kiwi, slice them lengthwise to create beautiful thin pieces that will show through the wrapper.
- Set Up Your Dipping Station: Pour hot water (it doesn’t need to be boiling, just very warm) into your shallow bowl or pie plate. Make sure you have a clean plate nearby to lay your softened rice paper on.
- Soften the Rice Paper: Take one rice paper wrapper and quickly dip it into the hot water. Don’t submerge it! Just rotate it gently for about 10-15 seconds until it becomes pliable and soft. It will continue to soften as you work with it on the plate, so don’t over-soak.
- Assemble Your Roll: Carefully lay the softened rice paper flat on your clean plate. Now, it’s time for the fun part!
First Layer (The Show-Offs!): Place a few of your prettiest fruit slices (like strawberries or kiwi) near the bottom edge of the rice paper, leaving some space on the sides. These will be visible through the wrapper!
Stack It Up: Pile your remaining fruit on top of the base layer, so it creates a little mound. Don’t overfill, or it’ll be tricky to roll. - Time to Roll!
Fold the Bottom: Gently pull the bottom edge of the rice paper, so it goes up and over your fruit filling, tucking it snugly underneath.
Fold the Sides: Fold in the left and right sides of the rice paper towards the center.
Roll It Tight: Starting from the bottom, roll the spring roll upwards, keeping it as tight as you can without tearing the paper. Then, you’ll end up with a beautiful, translucent roll filled with colorful fruit! - Enjoy! Your fruit salad spring rolls are best enjoyed fresh! You can eat them as is, or for an extra treat, dip them into your favorite yogurt.
