Easy and Versatile Two Ingredient Fall Dessert Recipe

The dry ingredients come as a mix and this recipe substitutes a can of pumpkin puree for the usual eggs, oil, or butter. 

We’ve made these cookies successfully with several brands of cookie mix, so you can use whatever you have on hand or what’s on sale.

If you use a brand like Betty Crocker, you’ll get those wonderfully soft, cakey cookies that are an absolute delight.

They hold up well and travel easily, making them perfect for parties!

2 Ingredient Pumpkin Chocolate Chip Cookies Recipe

Prep Time: 5 minutes
Bake Time: 10–15 minutes
Total Time: 20 minutes
Yield: Varies by mix and cookie size (approx. 24 cookies)

Ingredients (Just 2!)

  • 1 box (approx. 17.5 oz) Chocolate Chip Cookie Mix (Any brand works! We love the soft, cakey results with Betty Crocker.)
  • 1 can (15 oz) 100% Pure Pumpkin Purée (Note: Do not use Pumpkin Pie Filling. You want the pure, unsweetened pumpkin.)

Supplies You’ll Need

  • Large Mixing Bowl
  • Fork (or sturdy spatula)
  • Cookie Sheets
  • Parchment Paper (or silicone baking mat)

Instructions (Perfect for beginners, kids and busy people)

  1. Prep: Preheat your oven to the temperature listed on your cookie mix packaging. Line your cookie sheets with parchment paper or a silicone mat.
  2. Combine: Pour the entire box of dry cookie mix and the entire can of pumpkin purée into your mixing bowl.
  3. Mix: Use a fork or spatula to stir the ingredients until they are just thoroughly combined. 
  4. Drop & Space: Scoop rounded spoonfuls of the batter onto the prepared cookie sheets, leaving an inch or two between each cookie. These cookies do not spread much, but they puff up.
  5. Bake: Bake for 10–15 minutes, or according to the low end of the time listed on your cookie mix packaging. The cookies are done when the edges look set and the tops spring back lightly when touched. (Our batch took 12 minutes, but your time may vary slightly!)
  6. Cool: Carefully remove the pan from the oven. Let the cookies cool on the sheet for about 5 minutes before transferring them to a wire rack to cool completely.
