Lycheelicious Lychee Ginger Popsicles Recipe

Freeze time: 2-3 hours
Yield: 6-10 popsicles depending upon mold size
Ingredients
½ cup Lychee (peeled and pitted)
¼ cup Sugar
1 ½ cups Unsweetened Coconut Milk
¼ cup Crystalized Ginger, Finely Chopped

Popsicle Molds
Instructions
1) Peel lychee and remove the seeds.
2) Add the prepared lychee, sugar and coconut milk to your blender and blend until smooth.
3) Finely chop the crystalized ginger and add some to each cavity in your popsicle molds.
4) Fill popsicle molds with the lychee mixture using a funnel or pour directly into the mold.
5) Freeze for 2 to 3 hours or more.
7) Enjoy your delicious, creamy, vegan lychee ginger popsicles!
